Flan
*For this recipe you will need a large rectangular pan and a small rectangular pan.

- 1 cup of white sugar for the caramel
- 1 1/4 cups of white sugar
- 1 teaspoon of vanilla
- 5 eggs or the egg replacer of your choosing (follow instructions of egg replacer for quantities)
- 1 can of 13oz evaporated milk or 13oz of coconut milk for those with dairy allergies.
Steps:
- Preheat oven at 350°F
- In a large rectangular pan add an inch of water where you are going to bake the flan in a bain-marie "BaƱo de Maria".
- In the stove, add 1 cup of withe sugar with 1/3 of water. When its golden pour in a small rectangular pan.
- In a bowl, break the eggs and stir until mix. No more than 10 seconds.
- Add the rest of the ingredients, mix and strain.
- Pour into caramelized pan.
- Place the small pan in the bain-marie.
- Bake for 1 hour and 15 minutes or until you insert a toothpick in the center and it comes dry.
- Take out of the oven, let it rest until is not hot anymore. Cover and place in the fridge.
- Flip into plate when serving.
