Flan

*For this recipe you will need a large rectangular pan and a small rectangular pan.


Ingredients:

  • 1 cup of white sugar for the caramel 
  • 1 1/4 cups of white sugar 
  • 1 teaspoon of vanilla
  • 5 eggs or the egg replacer of your choosing (follow instructions of egg replacer for quantities)
  • 1 can of 13oz evaporated milk or 13oz of coconut milk for those with dairy allergies. 
*Coconut milk may add flavor to the recipe. 

Steps: 

  1. Preheat oven at 350°F 
  2. In a large rectangular pan add an inch of water where you are going to bake the flan in a  bain-marie "BaƱo de Maria". 
  3. In the stove, add 1 cup of withe sugar with 1/3 of water. When its golden pour in a small rectangular pan. 
  4. In a bowl, break the eggs and stir until mix. No more than 10 seconds. 
  5. Add the rest of the ingredients, mix and strain. 
  6. Pour into caramelized pan. 
  7. Place the small pan in the bain-marie. 
  8. Bake for 1 hour and 15 minutes or until you insert a toothpick in the center and it comes dry. 
  9. Take out of the oven, let it rest until is not hot anymore. Cover and place in the fridge. 
  10. Flip into plate when serving.
